#SoulFoodSunday: Sweet Greens Harvest Bowl Salad Recipe

Happy Sunday everyone! I hope you had a fantastic weekend and ready for a new week. I decided that I wanted to start sharing a new recipe every week that is not only easy to make and delicious, but also good for the soul. Living is all about trying new things, so why not try to spice up your life with new recipes?

For the first #SoulFoodSundayI wanted to share my latest obsession: The Harvest Bowl.

When I lived in New York City last summer I became obsessed with Sweet Greens. It is a chain of “build your own salad” restaurants in the city with many healthy options. Luckily, there was one right around the corner from my internship; I ate there almost daily. A few weeks ago, I found a recipe of my favorite salad from one of my favorite bloggers, Amber Fillerup Clark, and have been eating it everyday ever since. The recipe is easy to make and I try and make sure everything I use is organic or from the farmers market. I have changed a few things from the original recipe but I hope you enjoy it as much as I do!

 

-A whole head of kale (chop it up)

-3 sweet potatoes, pealed, cubed and roasted

-Organic Mozzarella cheese (shredded)

-1 diced apple

-Smashed Almonds

-Balsamic vinaigrette dressing

-1/2 cup of quinoa

-A protein (grilled tofu or chicken – if wanted)

 

Simply add everything together in a bowl and toss your salad – REALLY GOOD. This salad is packed with protein and greens to help keep you healthy with the changing seasons. It is also perfect for meal prepping. I mean nothing is as good as the real thing, but I promise you will be obsessed with this salad! So give it a try this week and enjoy!

 

ps. I added roasted rainbow carrots to my salad today just to make it a little more delicious.
